CHARACTERISTICS
Bright red in color, with unctuous, white and aromatic fat, easily visible in infiltrated veins between the muscle fibers. Its flavor is delicate and slightly salty, with a contribution of fats with a healthy cardiovascular profile that increases good cholesterol and reduces bad cholesterol. Very digestive and suitable for a balanced diet at any age, with a moderate amount of calories that does not contribute to weight gain.
ELABORATION
D.O.T Antonio Mata hams are made from the hind leg of Duroc pigs, raised entirely in the province of Teruel, fed with natural products without chemical additives and a curing time between 18 and 30 months depending on the size of the ham. piece, all under the strict control of the Regulatory Council of the Denomination of Origin of Teruel which, after an exhaustive evaluation of the ham, marks it with the 8-point star and a numbered vitola that allows us to find out all the processes carried out on that piece.
