Bright red in color, with unctuous, white and aromatic fat, easily visible in infiltrated veins between the muscle fibers. The flavor is delicate and slightly salty, with a contribution of fats with a healthy cardiovascular profile that increases good cholesterol and decreases bad cholesterol. Very digestive and suitable for a balanced diet at any age, with a moderate amount of calories that does not contribute to weight gain.
ELABORATION
Bodega Casa Mata hams are made from the hind leg of Duroc breed pigs fed with natural products without chemical additives and a curing time between 15 and 22 months depending on the size of the piece.
